Why did you agree to create a gourmet beauty shot for Phyltres?
I love taking risks and creating. Phyltres’ project immediately spoke to me and won me over. I’m convinced, and I’ve seen it firsthand, that good nutrition has positive effects on both health and well-being. Taking part in the creation of this innovative concept was an exciting collective, intellectual, and industrial adventure. During lockdown, it pushed me out of my comfort zone. Selecting, testing, cooking, and distilling naturally anti-aging ingredients into just 50 ml was a challenge I truly enjoyed taking on.
What does the rose symbolize for you?
The rose is synonymous with beauty. It’s an ingredient I’ve worked with often in pastry, and its subtlety still inspires me. When Phyltres gave me its rose floral water to create my recipe, I have to admit, after smelling it, I had never encountered one of such quality before. You could almost drink it, like a fine wine. I even used the rest of the bottle in dessert recipes at Le Rouergat for Valentine’s Day: and our guests loved it!
